Pop goes the Rosemary popcorn!



Next to the pop of the bubble wrap, it's one of the most stress relieving sounds in my life. Yup, that familiar sound when corn kernels go, "Pop, poppity, pop, pop, pop... pop... "
It's a childhood memory, and an adulthood indulgence. I still like to make them the old fashioned way, and am not too fond of the microwave variety. One of my favorite flavours, that I feel adds the "grown-up" element to this childhood snack, is rosemary. For our movie nights, Mr Khan and I are especially fond of our Two Ways Rosemary Popcorn snacks. The recipes are sinfully simple, and eternally delightful. You just cannot get tired of these flavours. 

Before we start, a word of caution on rosemary. While it's an innocuous looking darling of a herb, and I love it for it's subtle flavour and aroma, the fact remains that rosemary comes on a woody stalk, and doesn't yield easily to the act of chopping. I'd strip the needles off the stalk before chopping it. Use herb scissors, they will make your task easier. Chop as finely as you can, because, and I speak from experience here, chewy bits of rosemary in your mouth are not pleasant. 

Now let's get started.

Rosemary, Black Pepper & Parmesan Popcorn



4 cups popped popcorn (use popping kernels, or a small bag of microwave popcorn)
1/2 tbsp EVOO
1/2 tsp chopped fresh rosemary
2 tbsp freshly grated Parmesan
A pinch of salt to taste (Not if using salted microwave popcorn)
Freshly ground black pepper

Whisk together the EVOO and chopped rosemary. Place the popped popcorn in a large bowl, and evenly sprinkle the grated Parmesan on top, while the popcorn is still hot. Toss well to combine, and then drizzle the rosemary oil over the popcorn. Season with freshly ground pepper and salt. let sit for a couple of minutes for the flavours to be mixed well, or eat right away. 

Garlic, Rosemary, Parmesan Popcorn 



4 cups popped popcorn (use popping kernels, or a small bag of microwave popcorn)
1 tbsp white butter
2 cloves garlic, minced 
1/2 tsp chopped fresh rosemary
2 tbsp freshly grated Parmesan
A pinch of salt to taste (Not if using salted microwave popcorn)

In a saucepan, melt the butter on low heat, and add the garlic and rosemary. Cook for a couple of minutes, or till the garlic is lightly browned. Remove from heat and set aside. 
Place the popped popcorn in a large bowl, and evenly sprinkle the grated Parmesan on top, while the popcorn is still hot. Toss well to combine, and then drizzle the butter over the popcorn. Season with salt. Enjoy with your favourite television series or movie.
