Who'd Have Thought That The Mad Hatter Would Love Them Strawberries So Much!

So, basically, I am driving into the salad sunset. There are absolutely awesome women around me, who, among all things, discuss vinaigrette recipes. I mean, when my mother was dreaming up rich dreams for me, could she have ever thought that I'd be on first names basis with folks who make their own vinaigrette? Well, here I am, and it's a beautiful space to be in. So what do we have here? A salad made from massaged Kale. Yup, you massage kale. And strawberry vinaigrette that I made at home. Then I ate the entire thing. Now I am in some sort of salad heaven and new ideas are doing sprints through my head. 


Please be prepared to see a lot of salads here. For now, a simple Strawberry Dressing would do. 




For the Vinaigrette
5-6 strawberries coarsely chopped
2 tablespoons lemon juice
1 tsp sugar
1/2 tbsp apple cider vinegar
1 tablespoons Olive Oil
A pinch of poppy seeds

Place the strawberries in a blender; cover and process until pureed. Add lemon juice, sugar, vinegar and oil; process until thickened. Stir in poppy seeds. Transfer to a bowl or jar; cover and store in the refrigerator.

For the salad
1 bunch American, curly kale, hard stems removed and torn into pieces
1 cup strawberries, sliced
1 tbsp EVOO
3 tbsp Strawberry Vinaigretee
1 tsp sea salt

Place kale pieces in a large bowl, add olive oil and salt. Massage kale until it turns a darker shade of green and becomes soft. Drizzle the dressing over the kale. Add the sliced strawberries. Chill in the fridge for a few minutes and serve cold.

I also add a handful of mixed salad greens to give this extra body and texture. Try your own green variant.
