Let's do the Pancake dance, babies!

Here is a text version of the recipe.

1 medium zucchini
1 medium white onion chopped
2 extra-large eggs, lightly beaten
4 tablespoons whole wheat flour
1/2 teaspoon baking powder
1 teaspoon rock salt
1/2 teaspoon freshly ground black pepper
1/4 cup milk
Olive oil to cook

Grate the zucchini into a bowl. Immediately stir in the onion and eggs. Stir in the flour, the baking powder, milk, salt, and pepper.

Heat a large non-stick pan over medium heat and pour in 1 tablespoon oil in the pan. When the oil is hot but not smoking, lower the heat to minimum and drop a ladle of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Keep the pancakes warm in a pre-heated oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. Serve hot.

  1. I don't like pancakes at all, although I may occasionally eat one. The Zucchini pancake looks like a healthier version of pancake and I like it enough to try :)
