Banana Cake In A Mug



I wake up thinking of food. Unless it’s been a nightmare that’s broken my sleep, and then I just want to hug my pillow and go back to sleep. But nightmares know better than to bother me much, so mostly, I wake up thinking of food, like I said. And instant breakfasts are a big wins in my life. It’s a tad difficult concentrating on the task at hand when your rumbling stomach is drowning out all sounds of reason and sense. So I am constantly looking for quick recipes that are up and ready to eat before I get too grumpy and try to eat a pillow.

This cake is ready before you can fetch the newspaper and brush your teeth. This pretty cat practically makes itself. So in my household, it’s a big favourite. There is usually always an over-ripe banana lying around in every house, and a bit of milk somewhere in the refrigerator. Get those two dating, throw in a party of a few other ingredients and you have a cake baking in a microwave. It’s that cool, babies!







Ingredients
Cooking spray
3 tbs whole wheat flour
3 tsp organic brown sugar
1/8 tsp salt
1/8 tsp baking powder
1/8 tsp baking soda
1 egg
1/4 tsp vanilla extract
1 tbs vegetable oil
1 tbs reduced -fat milk
1 ripe banana, mashed

 

Method

Spray a microwave safe mug with cooking spray.
In a separate bowl, mix together flour, sugar, salt, baking powder, and soda. Lightly beat the egg and mix it well into the dry ingredients. Now add the vanilla, oil, milk and mashed banana.
Just microwave at maximum power for up to 3 minutes. If not done, microwave for a further 30 seconds. Once it’s done, leave it aside for a few minutes as the cake will be very hot.
Top it with half a spoonful of Orange marmalade and some dried berries for added flavor!
