Winner of the Recipe Contest - Quinoa Cutlet Sandwiches

Renita Mascarenhas from Mumbai won the Breakfast Projekt Recipe Contest! She works as a quality analyst, and enjoys cooking in her free time. Her recipe Quinoa Cutlet Sandwiches got a thumbs up from judges and guests alike at the Breakfast Projekt Brunch. Eaten as cutlets, or in a sandwich, the cutlets are a great breakfast option. Quinoa Cutlet Sandwiches  

Quinoa approx a cup

1 medium onion finely chopped

1 tbsp red vinegar

2 green chillies finely chopped

1 tsp garlic ginger paste

1 egg

2-3 slices of bread moistened with water and mashed

3 tbsp chopped coriander

1/4 tsp turmeric

1 tsp bafat masala powder

1/4 tsp garam masala (optional)


Cook quinoa as directed on the packet. Set aside to cool.

Once cooled mix with all above ingredients with cooked quinoa and make small balls and flatten them.

Shallow fry in Olitalia olive oil on both sides. Place cutlets between slices of bread. Add a slice of cheese, tomato, lettuce to make the sandwich. Or just have it as is with chilly-tomato/tomato sauce.
