Tomato, Spinach and Feta Baked Eggs

This is a really pretty dish, and I like my food to look good. It's pretty simple to assemble and bake, and I am a huge fan of Feta Cheese, and this lets me have it for breakfast.

Ingredients
1 cup grape tomatoes, sliced in half
8-10 Spinach leaves, washed and chopped
1/3 cup crumbled feta
1/4 cup fresh cream
6 egg whites
salt + pepper




Preparation
Preheat oven to 350.  
Put tomatoes and spinach into a bowl and sprinkle salt and pepper over them. Pour in the egg whites.
Line a baking tray with foil, and pour this mixture out.
Sprinkle crumbled feta across mixture.   Pour the cream over the mixture.  
Bake for 18-20 minutes, or until eggs are cooked to your liking.  
Serve hot with toast.
