Roasted Brussels Sprouts and Grapes with Walnuts

Some Sundays are just too sweet and romantic to bother with an early breakfast. But getting up late has its disadvantages. I woke up pretty hungry, and knew that I did not really want to spend a lot of time in the kitchen making an elaborate breakfast. That is when Pinterest came to our rescue, and this quick and delicious recipe became our brunch. People have an extreme reaction to Brussels sprouts and I am fortunate that my husband loves them too. I cannot even begin to describe how awesome the grapes taste with the sprouts. I found the original recipe HERE, and it looked so good in the picture that I knew that it would make a perfect Sunday brunch. So here it is, the lovely looking, quick fix meal.








Ingredients
  • About 2 cups Brussels sprouts, halved or quartered if large
  • About 2 cups grapes
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh thyme
  • Coarse salt and freshly ground pepper
  • ½ teaspoon balsamic dressing
  • ¼ cup walnuts, toasted and coarsely chopped

 Preparation
  1. Preheat oven to 230 degrees. On a baking sheet, toss brussels sprouts and grapes with oil and thyme. Season with salt and pepper. Roast, until caramelized and tender, about 20 minutes.
  2. Drizzle the tray with the balsamic dressing and toss in the walnuts.
