Blueberry Quinoa Parfait

I first saw Blueberries in an imported Cooking Magazine that I saw at a book stall outside my school in Agra. I saved my pocket money for almost two months and bought it off, and within a month, it was stolen from my room by a neighbour. Some memories still hurt.
Anyways, about the blueberries. I was convinced that if I searched with all my heart, I will find them somewhere in Agra. I did not. Even years later, I could only find a dull, canned version of the lovely berry I had seen in that beautiful book years ago. Then, on my travels abroad, I finally got to eat some, but never really got to cook with them. So finally, after all these years, when I found boxes filled with them at a local supermarket, you cannot imagine the joy I felt!

I barely managed to save a handful and really get down to putting them to use in a recipe. I love their natural flavour, and hence did not want to actually cook them. I wanted something with Quinoa, because the nutty and juicy combination of Quinoa and berries is an all time winner. So this cool and light recipe is what I finally managed with my blueberries.

  •                  1 cup quinoa, well rinsed
  •                  2 cups water
  •                  2 cups vanilla yogurt
  •                   2 cups blueberries
  •                  1/4 cup walnuts, toasted and coarsly chopped


  • Bring the quinoa and water to a boil in a medium sized sauce pan, reduce the heat and simmer covered until the water has been absorbed and the quinoa is tender, about 15-20 minutes.
  • Chill the quinoa in the fridge.
  • Assemble the parfait by layering the quinoa, yogurt, blueberries and walnuts.

Walnuts are rich source of energy and contain health benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health.
